Cecina is an oak-smoked dry-cured beef: our Cecina is the most famous in Spain, and now a panel of food experts from the Guild of Fine Food here in the UK have awarded it one of the top marks possible in this year's competition! From the mountains of Leon, it has its own Denomination of Origin as a mark of its quality. The beef pieces, weighing a minimum of 1kg, are first salted, then smoked over oak fires for 2 weeks, then dried naturally for 4-5 months. Serve the thin slices simply as they are, or use them as you might an Italian Bressaola or carpaccio, with rocket leaves, Manchego shavings and a vinaigrette dressing, or perhaps with apple slices and a mint dressing. The slices can also be used to wrap round asparagus, cheeses or even scallops, or fried lightly with scrambled eggs.
