The Asturian Ciders from 'El Gaitero' are famous throughout Spain. This dry cider is known as a 'Champagne' cider because it is bottle-fermented and stopped with a champagne cork! It uses traditional varieties of apples from Asturias; clear in colour, fragrant in flavour, but still with a sharp tang of apple.

Here is a different type of dry Asturian Cider: a still, or 'natural', cloudy cider. The custom is to pour a small amount at a time using the special pouring spout from a great distance into a flat rustic glass to introduce some air to the cider and help the flavour develop - try it and see!
