Manzanillas are made in the same way as a fino, but because it is made near the sea, the humid, salty air affects the taste and gives it a fuller flavour, with notes of apple and straw and a nutty finish. Light golden in colour with a floral aroma and notes of olive and apple. Though dry, this is rich and round for a Fino with a soft finish. Fino sherry is made using a dry wine made from Palomino grapes, which develop a layer of white yeast, the 'flor', in the cool damp air of the Bodegas - only those with a particularly good flor are made into Finos, as this keeps the wine from oxidising; those with less flor become Olorosos. Serve the Fino well chilled as an aperitif or with a starter.

A velvety medium-dry sherry with a strong, complex flavour: chocolate, caramel and roasted almond notes and a clean taste on the palate. Oloroso sherries start out the same as Fino, but in those barrels with less 'flor', the wine oxidises and matures differently to produce this complex and subtle drink.
