| This is a semi-dry sherry with an aroma of butterscotch and hazelnuts, a caramel colour and spicy flavour. Amontillado develops from an aging Fino after the 'flor' has died, allowing oxygen into the wine to continue the maturation process. Serve well-chilled, with smoky flavours such as mushrooms or glazed chicken, or cheeses like Manchego, Mahon or Cabra al Romero. Now Gold medal winner at the 2009 National Wine Awards in Cordoba. |
