This is the Spanish equivalent of Ratatouille, a wonderful hand-made mixture of peppers, onions and tomatoes, with a little olive oil, sugar and salt to bring out their flavours. Use as a base for casseroles, heat gently and serve on toast as an appetiser, or bake in a terracotta cazuela with an egg on top as a light meal - a taste of the Mediterranean in a jar.
